KICHDI

A go-to, most favourite meal to have when you feel like something simple, packed with wholesome  flavour and all in one pot. The main ingredients are red, yellow dhal and rice (brown/black rice, quinoa or basmati) 

Ingredients :

Yellow dhal 1/2 cup

Red dhal 1/2 cup

Rice 1/4 cup

1 small - medium size onion

A small piece of ginger

1 teaspoon Cumin Seeds

1/2 teaspoon Turmeric Powder 

Cherry tomatoes

2 tablespoons Ghee

4-5 cups Water 

Salt as required 

Curry leaves

 

Method :

Rinse and wash the yellow dhal and rice together. Heat the ghee in a pressure cooker, once melted add the cumin seeds, ginger and curry leaves, heat for a few minutes and then add the onions. Saute until the onions are translucent, then add the turmeric. Add the rice and dhals, pour in the water and season with salt. 

Close and cook for about 20-30 minutes. Depending on how you like the consistency thick or thin, add less or more water. 

Serve with plain yoghurt.
